Banana Pancakes

These banana pancakes are my favourite!

They´re tasty, healthy and so light you will never go back to making pancakes from a mix again.

Perfect for lazy Sunday mornings, brunch with friends or just a quick snack that will satisfy your sweet tooth. All you need is a blender and a few ingredients!

They will definitely brighten up you cold gray morning.

Ingredients

  • 2 bananas (if they are too small, use 3)
  • 2 eggs
  • 1/2 cup of rolled oats
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of cinnamon (optional)
  • pinch of salt

Instructions

In a blender, combine all the ingredients: bananas, eggs, oats, baking powder, cinnamon and salt. Just use any leftover bananas you find in your counter: overripe bananas are perfect!

Allow to blend until the mixture is smooth and let it rest for 5 – 10 minutes, until it has thickened a bit. Melt some butter or coconut oil in a large non-stick frying pan on medium heat. Swirl around to coat the pan well, and fry spoonfuls of the mixture until golden brown on both sides.

To serve, add any toppings you like: fresh fruit, yogurt, a drizzle of maple syrup or even nutella.
